Pour a little extra virgin olive oil in frying pan, add the leek and the cooked ham cut into strips. Season with salt and cook for fifteen minutes, stirring constantly. If it gets too dry, add some water.<\/li>\n<li>Peel, wash and cut the potatoes into thin slices, then place them in a pot of salted water and bring to a boil. Once cooked, drain and allow to cool.<\/li>\n<li>Combine the cooking cream, the egg, the grana and the pepper in a bowl.<\/li>\n<li>Roll out the shortcrust pastry to about 4 mm thick and place it in the baking tin with the supplied parchment paper. Prick the shortcrust pastry all over with a fork.<\/li>\n<li>Combine the potatoes with the leek and the ham. Fill the shell with the warm vegetable and spread it evenly with a spoon. Pour the emulsion of cooking cream and egg over the whole surface.
